Ingredients
2 tablespoons butter
1 small onion, finely chopped
2 cloves garlic, minced
2 celery stalks, chopped
3 medium carrots, sliced
1/3 cup all-purpose flour
6 cups turkey or chicken broth
2 cups cooked turkey, shredded
2 cups egg noodles
1 cup heavy cream or half-and-half
1 teaspoon dried thyme
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (optional for garnish)
Instructions
- In a large pot, melt butter over medium heat. Add onion, garlic, celery, and carrots. Sauté for 5–7 minutes until softened.
- Sprinkle in the flour and stir to coat the vegetables. Cook for 1–2 minutes.
- Gradually whisk in the broth. Bring to a boil, then reduce to a simmer for 10–12 minutes.
- Add the turkey and egg noodles. Simmer for 8–10 minutes until noodles are tender.
- Stir in the cream, thyme, salt, and pepper. Simmer another 3–5 minutes without boiling.
- Remove from heat. Garnish with fresh parsley if desired and serve hot.
