Ingredients

1 package gnocchi

1 lb Italian sausage (mild or spicy)

2 cups fresh spinach

1 cup carrots, diced

2 cloves garlic, minced

1 cup heavy cream

4 cups chicken or vegetable broth

1 tsp dried thyme

Salt and pepper to taste


Instructions

  1. Brown the sausage: Heat a large pot over medium heat. Add the sausage and cook, breaking it up as it browns. Drain any excess fat and set aside.
  2. Sauté the vegetables: In the same pot, sauté the garlic and carrots for about 3 minutes, until tender.
  3. Add the broth: Pour in the broth and bring the mixture to a simmer.
  4. Cook the gnocchi: Add the gnocchi and cook for 2-3 minutes, or until they float to the top.
  5. Stir in spinach and cream: Add the spinach and heavy cream, letting the spinach wilt and the cream thicken the soup.
