Ingredients
12 oz fettuccine pasta
1 lb ground beef
3 tbsp butter
4 garlic cloves, minced
1 ½ cups heavy cream
1 cup freshly grated parmesan cheese
½ tsp salt
¼ tsp black pepper
2 tbsp chopped fresh parsley (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook the fettuccine until al dente according to the package instructions. Reserve 1 cup of pasta water, then drain.
2. In a large skillet over medium-high heat, cook the ground beef until browned and fully cooked. Season with salt and pepper. Transfer to a bowl and set aside.
3. In the same skillet, reduce heat to medium and melt the butter. Add minced garlic and sauté for 1 minute until fragrant, without browning the garlic.
4. Pour in the heavy cream and bring to a gentle simmer. Stir in the parmesan cheese until the sauce thickens and becomes smooth.
5. Return the beef to the skillet. Add the cooked fettuccine and toss everything together with tongs, adding pasta water as needed to loosen the sauce.
6. Taste and adjust seasoning. Serve immediately, garnished with extra parmesan and chopped parsley if desired.
Notes
For an even silkier sauce, use freshly grated parmesan rather than pre-shredded cheese.
Don’t skip reserving pasta water—it helps loosen and bind the sauce to the noodles.
This dish is best served fresh, but if reheating, add a splash of cream or milk to restore the sauce’s consistency.
