Creamy Mushroom Garlic Chicken Alfredo & Hot Honey Roasted Potatoes

Description

A rich and savory chicken Alfredo with seared mushrooms and garlic, paired with crispy roasted potatoes drizzled in hot honey. This comfort-forward dish delivers bold flavors and a balanced texture, perfect for an impressive weeknight dinner or a cozy weekend meal.


Ingredients

2 large chicken breasts or 4 thighs

2 cups sliced baby bella or cremini mushrooms

3 garlic cloves, minced

1 ½ cups heavy cream

1 cup grated Parmesan cheese

2 tablespoons butter

3 tablespoons olive oil (divided)

1 teaspoon salt

½ teaspoon black pepper

1 ½ pounds red or baby potatoes, halved

1 teaspoon paprika

1 teaspoon garlic powder

2 tablespoons hot honey


Instructions

1. Preheat oven to 425°F (220°C). In a mixing bowl, toss halved potatoes with 2 tablespoons olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 30–35 minutes, flipping halfway through.

2. Season chicken with salt and pepper. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until cooked through. Set aside.

3. In the same skillet, melt butter and add mushrooms. Cook for 5–7 minutes until browned. Stir in garlic and sauté for 1 more minute.

4. Pour in heavy cream, bring to a simmer. Add Parmesan and stir continuously until melted and the sauce thickens. Adjust seasoning to taste.

5. Slice chicken and return it to the skillet. Simmer to combine flavors.

6. Remove roasted potatoes from the oven and drizzle with hot honey before serving.

7. Serve chicken Alfredo hot with a side of honey-drizzled potatoes. Garnish with fresh parsley if desired.

Notes

For extra crispiness, let the roasted potatoes rest a few minutes before drizzling hot honey.

Don’t boil the Alfredo sauce—gentle simmering ensures a creamy, smooth texture.

Use freshly grated Parmesan for the best melt and flavor in the sauce.
