Description
A rich and comforting casserole that brings together tender broccoli florets, a creamy blend of cheeses, and savory French onion flavor, topped with golden crispy onions. Ideal as a standout side dish or a cozy vegetarian main, this dish is perfect for holidays, potlucks, or weeknight dinners.
Ingredients
5 cups broccoli florets
8 oz cream cheese, softened
2 cups shredded cheddar cheese
1 cup French onion dip (store-bought or homemade)
1 cup sour cream
1 can (10.5 oz) cream of mushroom soup
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups crispy fried onions
Instructions
1. Bring a large pot of salted water to a boil. Add broccoli florets and blanch for 2–3 minutes until just tender but still vibrant. Drain and set aside.
2. In a large mixing bowl, combine cream cheese, shredded cheddar, French onion dip, sour cream, and cream of mushroom soup. Stir in garlic powder, onion powder, salt, and pepper until smooth.
3. Fold the blanched broccoli into the mixture gently until fully coated.
4. Transfer the mixture into a greased 9×13 baking dish and spread evenly.
5. Top generously with crispy fried onions.
6. Bake uncovered in a preheated 350°F (175°C) oven for 25–30 minutes until bubbly and golden on top.
Notes
For best texture, avoid overcooking the broccoli during blanching. It should stay vibrant and slightly crisp.
To make ahead, assemble everything except the fried onions and store in the fridge up to 2 days. Add onions just before baking.
For extra flavor, mix in cooked bacon bits or shredded rotisserie chicken before baking.
