Description

Creamy Chicken Stroganoff is a cozy, rich pasta dish that brings comfort to your table in less than an hour. With golden seared chicken, caramelized mushrooms, and a tangy sour cream sauce over noodles, this recipe blends classic flavors with an easy, weeknight-friendly process. It stores well and is perfect for meal prep, too.


Ingredients

1 pound chicken breast or thighs, boneless and skinless

8 ounces cremini or white mushrooms, sliced

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup chicken broth

1/2 cup sour cream

1/2 cup heavy cream

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (optional)

8 ounces egg noodles or fettuccine


Instructions

1. Cut chicken into bite-sized pieces and season with salt, pepper, and paprika.

2. In a large skillet, heat olive oil and butter over medium-high heat. Sear chicken until golden brown, then remove and set aside.

3. Add mushrooms and onions to the same skillet. Cook until caramelized, about 6–7 minutes. Stir in garlic and cook for 1 more minute.

4. Sprinkle flour over the vegetables and stir to coat. Cook for 1 minute to eliminate the raw flour taste.

5. Slowly whisk in chicken broth, scraping up any brown bits from the pan. Simmer until thickened.

6. Lower heat and stir in sour cream and heavy cream. Mix until smooth and creamy.

7. Return chicken to the skillet and simmer on low for 5–7 minutes.

8. Meanwhile, cook noodles according to package instructions. Drain and combine with sauce or serve topped with the creamy mixture.

9. Garnish with chopped parsley and serve warm.

Notes

Let the sour cream and cream come to room temperature before adding to prevent curdling.

Sear the chicken in batches if needed to avoid overcrowding the pan.

You can substitute Greek yogurt for sour cream, just add it off the heat to avoid splitting.
