Description

Creamy Chicken Gnocchi Soup is a rich, comforting bowl layered with tender chicken, pillowy gnocchi, fresh vegetables, and herbs, all enveloped in a silky cream broth. It’s a satisfying one-pot dinner perfect for chilly nights or cozy family meals.


Ingredients

2 tablespoons olive oil

2 tablespoons butter

1 small onion, diced

2 carrots, sliced

2 celery stalks, diced

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon Italian seasoning

1 pound chicken breast or thighs, diced

4 cups chicken broth

1 pound potato gnocchi

1 cup heavy cream

2 cups fresh spinach

Salt and pepper, to taste


Instructions

  1. 1. Heat olive oil and butter in a large Dutch oven over medium heat.
  2. Add diced onions, carrots, and celery
  3. . Sauté until softened, about 5–6 minutes.
  4. Stir in minced garlic, thyme, and Italian seasoning.
  5. Let it cook for 1 minute to release the aromatics.
  6. Add diced chicken, season with salt and pepper, and cook until the chicken is no longer pink on the outside. Pour in chicken broth. Bring to a gentle simmer and cook for 10 minutes until the chicken is tender and cooked through. Stir in the gnocchi.
  7. Simmer for another 3–4 minutes, until the gnocchi float and are cooked.
  8. Reduce the heat and stir in the heavy cream.
  9. Add the spinach and cook just until wilted.
  10. Taste and adjust seasoning.
  11. Serve warm, optionally with cracked black pepper or grated Parmesan.

Notes

Don’t overcook the gnocchi — once they float, they’re done!

Heavy cream can be replaced with coconut milk or half-and-half for lighter or dairy-free versions.

Add a Parmesan rind while simmering the soup for extra depth of flavor, then remove before serving.
