Ingredients
12 oz fettuccine pasta
2 boneless, skinless chicken breasts
2 cups broccoli florets
1 ½ cups heavy cream
3 cloves fresh garlic, minced
1 cup grated Parmesan cheese
2 tablespoons butter
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear until golden and cooked through, about 6–7 minutes per side. Remove and slice.
2. Bring a large pot of salted water to a boil. Cook fettuccine until just shy of al dente. In the last 2 minutes, add broccoli florets. Drain together and set aside.
3. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds. Pour in heavy cream and simmer for 3–4 minutes.
4. Whisk in Parmesan until smooth. Toss in pasta and broccoli. Stir well to coat.
5. Top with sliced chicken. Add pasta water as needed to loosen sauce. Serve hot with extra Parmesan and black pepper.
Notes
Let the chicken rest before slicing to retain juiciness.
Use freshly grated Parmesan for best texture and flavor.
Add a splash of reserved pasta water to adjust sauce consistency.
