1. Bring a large pot of salted water to a boil. Cook bowtie pasta according to package directions until al dente. Drain and set aside.

2. In a large skillet over medium-high heat, add olive oil and sliced smoked sausage. Sear the sausage on both sides until browned. Remove and set aside.

3. In the same skillet, reduce heat slightly and add garlic and cherry tomatoes. Sauté until the tomatoes soften and start to burst.

4. Pour in the heavy cream and add Cajun seasoning. Stir to combine and let the sauce simmer for 3–4 minutes until slightly thickened.

5. Return the cooked sausage and drained pasta to the skillet. Stir until everything is well coated in the sauce.

6. Add grated Parmesan cheese and stir until melted and fully incorporated. Adjust salt and pepper to taste.

7. Serve immediately with optional garnish of parsley or extra Parmesan.
