Ingredients
2 boneless chicken breasts
2 teaspoons Cajun seasoning
10 ounces rotini pasta
2 tablespoons butter
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Season chicken breasts with Cajun seasoning on all sides.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 4–5 minutes per side until cooked through. Remove and rest.
3. In a large pot, boil water with salt. Cook rotini pasta until al dente. Drain and set aside.
4. In the skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute.
5. Pour in heavy cream and stir. Gradually add mozzarella and Parmesan, whisking until melted and smooth.
6. Add cooked pasta to sauce and toss until fully coated. Simmer briefly.
7. Slice rested chicken and serve over creamy pasta. Garnish with parsley if using.
