Ingredients
2 large chicken breasts or 4 chicken thighs
1 tablespoon Cajun seasoning
1 tablespoon butter (for searing)
10 ounces cheese tortellini
1 tablespoon butter (for sauce)
2 cloves garlic, minced (or 1 teaspoon garlic powder)
8 ounces Velveeta cheese, cubed
1 cup heavy cream or milk
1 tablespoon chopped parsley (optional)
Instructions
1. Pat the chicken dry and season both sides with Cajun seasoning. Let it rest briefly to absorb the spices.
2. Heat a cast iron skillet over medium-high heat and melt 1 tablespoon butter. Sear chicken for 5–7 minutes per side until golden and cooked through. Set aside to rest.
3. In a separate pot, boil the cheese tortellini according to package instructions. Drain and set aside.
4. In a saucepan over medium heat, melt 1 tablespoon butter. Add garlic and sauté until fragrant. Add Velveeta cubes and stir in cream gradually, whisking until smooth and velvety.
5. Combine the drained tortellini into the cheese sauce and stir to coat well.
6. Slice the chicken and serve alongside the cheesy tortellini. Sprinkle with fresh parsley if using.
Notes
Use freshly minced garlic for a deeper flavor or garlic powder for speed—both work well.
If the cheese sauce thickens too much, thin it with a splash of milk while reheating.
For extra crisp chicken, don’t overcrowd the pan during searing—cook in batches if needed.
