Ingredients

2 boneless skinless chicken breasts

1 tablespoon Cajun seasoning

8 ounces spaghetti

2 cloves garlic, minced

1 cup heavy cream

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese (optional)

1 tablespoon olive oil

2 tablespoons butter

1 tablespoon chopped parsley (optional)

Salt, to taste

Black pepper, to taste


Instructions

1. Pat the chicken breasts dry and rub with Cajun seasoning.

2. Heat olive oil in a cast iron skillet over medium-high heat and sear chicken for 5–7 minutes per side until blackened and cooked through. Remove from heat and let rest, then slice.

3. Boil spaghetti in salted water until al dente. Drain and set aside.

4. In a saucepan, melt butter and add minced garlic. Simmer for 30 seconds.

5. Pour in heavy cream and bring to a gentle simmer.

6. Gradually whisk in mozzarella and Parmesan until smooth. Season with salt and pepper.

7. Add the cooked spaghetti to the sauce and stir to coat.

8. Plate the pasta and top with sliced Cajun chicken. Garnish with parsley if desired.

Notes

For an extra punch, double the garlic and add red pepper flakes.

Use freshly shredded cheese for best melting and flavor—avoid pre-packaged blends.
