Ingredients
2 large chicken breasts
8 oz rotini pasta
1 ½ cups shredded mozzarella cheese
1 cup heavy cream
2 tablespoons butter
3 cloves garlic, minced
1 tablespoon Cajun seasoning
2 tablespoons chopped parsley
½ teaspoon salt
¼ teaspoon black pepper
Instructions
1. Pat the chicken breasts dry and coat evenly with Cajun seasoning.
2. Heat a cast iron skillet or grill pan over medium-high heat with a bit of oil.
3. Sear the chicken for 5–6 minutes per side until fully cooked and nicely charred. Set aside to rest.
4. In a large pot, bring salted water to a boil and cook rotini until al dente. Drain and set aside.
5. In a separate saucepan, melt butter over medium heat and add minced garlic. Stir until fragrant.
6. Pour in the heavy cream and bring to a gentle simmer.
7. Add shredded mozzarella in batches, whisking until smooth and creamy.
8. Season the sauce with salt, pepper, and chopped parsley.
9. Toss the cooked rotini in the sauce until evenly coated.
10. Slice the rested chicken and serve on top of the creamy pasta.
11. Garnish with more parsley if desired.
Notes
Use freshly shredded mozzarella for a smoother melt—pre-shredded varieties can clump.
Let the chicken rest for 5 minutes before slicing to retain its juices.
For extra heat, add a pinch of cayenne pepper to the sauce.
