Ingredients
2 chicken breasts, boneless and skinless, cut into bite-sized cubes
2 tablespoons Cajun seasoning
2 tablespoons olive oil
1 tablespoon butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
Salt and black pepper, to taste
8 oz fettuccine or linguine pasta
Fresh parsley, chopped (optional)
Red pepper flakes (optional)
Instructions
- Season chicken with Cajun seasoning until evenly coated.
- In a large skillet, heat olive oil over medium-high. Sear chicken until golden and cooked through, about 5–7 minutes. Remove and set aside.
- Cook pasta according to package directions. Reserve 1/2 cup of pasta water, then drain.
- In the same skillet, melt butter over medium heat. Add garlic and sauté for 1 minute.
- Pour in chicken broth and cream, stir to combine, and simmer for 3–4 minutes.
- Stir in Parmesan cheese until melted. Season with salt, pepper, and red pepper flakes (if using). Add pasta water if needed to loosen sauce.
- Return chicken to skillet, add pasta, and toss to coat. Simmer for 2 more minutes.
- Serve hot, garnished with parsley if desired.
