Ingredients

4 cups broccoli florets, chopped

2 medium potatoes, diced

1 small onion, finely chopped

2 cloves garlic, minced

4 cups vegetable or chicken broth

2 cups sharp cheddar cheese, shredded

1 cup milk or heavy cream

2 tbsp butter

2 tbsp all-purpose flour

1 tsp Dijon mustard (optional)

1/2 tsp paprika

Salt and black pepper to taste

Fresh parsley or green onions for garnish


Instructions

  1. Sauté the Aromatics: Melt butter in a large pot over medium heat. Add chopped onion and garlic, sauté until soft. Stir in flour and cook for 1 minute, stirring constantly.
  2. Add the Broth and Vegetables: Slowly pour in the broth while stirring. Add diced potatoes and simmer for 10 minutes. Add broccoli florets and cook for another 5-7 minutes until tender.
  3. Blend for a Creamy Texture (Optional): Use an immersion blender to partially blend the soup, leaving some chunks for texture.
  4. Add Cheese and Cream: Reduce heat to low, stir in shredded cheddar cheese until melted. Pour in milk or cream, then add Dijon mustard and paprika. Season with salt and pepper. Stir well and let cook for 2 more minutes.
  5. Serve and Enjoy: Ladle into bowls, garnish with parsley or green onions, and serve hot with crusty bread.
