Ingredients
4 cups broccoli florets, chopped
2 medium potatoes, diced
1 small onion, finely chopped
2 cloves garlic, minced
4 cups vegetable or chicken broth
2 cups sharp cheddar cheese, shredded
1 cup milk or heavy cream
2 tbsp butter
2 tbsp all-purpose flour
1 tsp Dijon mustard (optional)
1/2 tsp paprika
Salt and black pepper to taste
Fresh parsley or green onions for garnish
Instructions
- Sauté the Aromatics: Melt butter in a large pot over medium heat. Add chopped onion and garlic, sauté until soft. Stir in flour and cook for 1 minute, stirring constantly.
