Description

This Creamy Boat Dip (Rotel Ranch Dip) is a vibrant, flavor-packed appetizer that comes together in minutes. With a creamy base of ranch-seasoned cream cheese and a colorful medley of Rotel tomatoes, sweet peppers, onion, and cheddar cheese, it’s the perfect chilled dip for summer parties, BBQs, and impromptu snacking. Ingredients

1 (8 oz) package cream cheese, softened

1 (10 oz) can Rotel diced tomatoes with green chilies, drained

1 cup shredded cheddar cheese

1/2 cup chopped red bell pepper

1/2 cup chopped yellow bell pepper

1/4 cup chopped red onion

1 packet (1 oz) ranch seasoning mix

1 tbsp chopped fresh parsley (optional garnish)


Instructions

  1. Let the cream cheese soften at room temperature or microwave for 15–20 seconds until easily mixable.
  2. Drain the Rotel tomatoes to remove excess liquid.
  3. Finely chop red and yellow bell peppers and red onion.
  4. In a large bowl, mix cream cheese, ranch seasoning, and drained Rotel until smooth.
  5. Fold in the chopped vegetables and shredded cheddar cheese.
  6. Cover and refrigerate for at least 1 hour to allow flavors to meld.
  7. Garnish with chopped parsley before serving.
  8. Serve with tortilla chips, crackers, or sliced veggies.
