Ingredients
1 sheet puff pastry, thawed
5 oz brie cheese, sliced or chopped
1/3 cup cranberry sauce
1/4 cup diced pancetta
1 egg, beaten (for egg wash)
4–5 sprigs fresh thyme
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Let the puff pastry thaw until pliable. Roll slightly on a floured surface to smooth creases.
3. Transfer to the baking sheet and score a 1-inch border around the edges without cutting through.
4. In a skillet, cook pancetta over medium heat until crispy. Drain on paper towels.
5. Spread cranberry sauce inside the scored border. Layer brie evenly. Top with pancetta and thyme.
6. Brush pastry edges with egg wash.
7. Bake for 20–25 minutes until pastry is puffed and golden, and cheese is melted.
8. Cool 5–10 minutes on a rack. Slice and serve warm or at room temperature.
Notes
Use chilled puff pastry – Keep it cold until just before assembling to maintain a flaky texture.
Do not overfill – Too much cranberry or cheese may make the center soggy and spill during baking.
Let it rest before slicing – A brief cooling period makes it easier to cut cleanly without losing the gooey filling.
