Ingredients
Chicken and Broth:
1 whole chicken (about 3–4 pounds), cut into pieces
10 cups water
2 teaspoons salt
1/2 teaspoon black pepper
2 bay leaves
1 onion, chopped
2 celery stalks, chopped
2 carrots, chopped (optional)
Dumplings:
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cold butter, cubed
3/4 cup milk (adjust as needed)
Instructions
- Combine chicken, water, salt, pepper, bay leaves, onion, celery, and carrots in a stockpot. Bring to a boil, then simmer for 1 hour.
- Remove chicken, discard bay leaves, shred meat, and strain broth if desired.
- Mix flour, baking powder, and salt. Cut in butter, then stir in milk to form a dough.
- Roll out dough to 1/8 inch thickness and cut into strips.
- Bring broth to a boil, then drop in dumplings one at a time. Simmer for 15-20 minutes.
- Add shredded chicken back into the pot, heat through, and serve.
