Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg yolk

1 teaspoon vanilla extract

1⁄3 cup eggnog

2 1⁄4 cups all-purpose flour

1 teaspoon baking powder

1⁄4 teaspoon salt

1⁄4 teaspoon ground cinnamon (for topping)

1⁄8 teaspoon ground nutmeg (for topping)


Instructions

1. In a large bowl, cream together the softened butter and sugar until light and fluffy.

2. Add egg yolk, vanilla extract, and eggnog. Beat until smooth and well combined.

3. In a separate bowl, whisk together the flour, baking powder, and salt.

4. Gradually add the dry mixture to the wet mixture. Mix until a soft dough forms.

5. Cover and refrigerate the dough for 30 minutes to chill.

6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

7. Scoop dough using a cookie scoop, roll into balls, and dip tops into a mix of cinnamon and nutmeg.

8. Place dough balls on the baking sheet, spaced apart.

9. Bake for 10–12 minutes, until edges are just set and centers are soft.

10. Let cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use room-temperature butter to achieve the ideal creamy consistency when creaming with sugar.
