Creamy and full of bold, buttery flavor, these mashed potatoes are a perfect side dish for grilled meats, hearty stews, or your favorite holiday spread. Cowboy butter adds an herby, slightly spicy richness that takes this comfort classic to the next level.
Ingredients
2 lbs Yukon Gold potatoes, peeled and cut into chunks
1/2 cup salted butter
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1/2 teaspoon crushed red pepper flakes (adjust to taste)
1 tablespoon lemon juice
Salt and black pepper to taste
1/2 cup whole milk or heavy cream (warmed)
Optional: fresh thyme or chives for garnish
Instructions
- Add potato chunks to a pot of cold salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes.
- Drain the potatoes and return to the hot pot to let excess moisture steam off.
- In a small saucepan, melt the butter over low heat. Stir in garlic, parsley, red pepper flakes, lemon juice, salt, and pepper. Simmer for 2-3 minutes and remove from heat.
- Mash the potatoes using a masher or ricer until smooth.
- Stir in the warmed milk and half of the cowboy butter mixture until creamy.
- Transfer to a serving bowl and drizzle with the remaining cowboy butter.
- Garnish with extra herbs and cracked black pepper. Serve warm.
