Bold, juicy, and dripping with buttery herb flavor, these Cowboy Butter Chicken Skewers are a grill favorite. Perfect for cookouts or weeknight dinners, they come together quickly and taste even better with a generous brush of cowboy butter.
Ingredients
1.5 lbs boneless skinless chicken thighs, cut into chunks
3 tablespoons lemon juice (plus extra for sauce)
4 cloves garlic, minced (divided)
1 teaspoon smoked paprika
1/2 teaspoon red pepper flakes (plus more for sauce)
1 teaspoon salt
1 tablespoon olive oil
1/2 cup salted butter
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh chives
Instructions
- In a bowl, mix chicken chunks with lemon juice, half the minced garlic, smoked paprika, red pepper flakes, salt, and olive oil.
- Cover and refrigerate for at least 30 minutes or up to 2 hours.
- Soak wooden skewers in water while the chicken marinates.
- Thread marinated chicken onto skewers.
- Melt butter in a small saucepan. Add remaining garlic, Dijon mustard, Worcestershire, herbs, red pepper flakes, and lemon juice. Simmer gently.
- Preheat grill to medium-high. Grill skewers for 10–12 minutes, turning every 2–3 minutes.
- Brush with cowboy butter during the last few minutes of grilling.
- Drizzle with more cowboy butter before serving and garnish with fresh herbs
