Description

Golden on the outside and pillowy within, Cottage Cheese Pancakes are a high-protein, tender breakfast treat. They pair beautifully with fruits, syrups, or even a simple dusting of powdered sugar.


Ingredients

1 cup cottage cheese (preferably full-fat, small curd)

2 large eggs

1/4 cup all-purpose flour

1/2 teaspoon baking powder

1 tablespoon sugar

Pinch of salt

1/2 teaspoon vanilla extract (optional)

Butter or oil for frying


Instructions

  1. In a bowl, mix cottage cheese and eggs until blended. Add vanilla if using.
  2. Stir in flour, baking powder, sugar, and salt until just combined.
  3. Heat a skillet over medium heat and add butter or oil.
  4. Spoon 2 tablespoons of batter per pancake onto skillet.
  5. Cook 2-3 minutes until bubbles form, then flip and cook 2 more minutes.
  6. Repeat with remaining batter. Serve warm with your favorite toppings.
