These Cottage Cheese Egg Bites are a high-protein, make-ahead breakfast or snack. Made with blended cottage cheese and eggs, they’re soft, fluffy, and packed with flavor. Perfect for meal prep, they’re easy to customize with veggies, herbs, or meat and reheat beautifully throughout the week.
Ingredients
12 large eggs
1 cup cottage cheese
1 cup shredded cheddar cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chopped spinach (optional)
1/3 cup cooked and crumbled bacon or sausage (optional)
2 tablespoons chopped onions or fresh herbs (optional)
Instructions
1. Preheat your oven to 350°F (175°C).
2. In a blender, combine the eggs, cottage cheese, cheddar cheese, salt, and pepper. Blend until smooth.
3. Lightly grease a non-stick or silicone muffin pan.
4. Add spinach, bacon, or any optional extras into the bottom of each muffin cup.
5. Pour the egg mixture into the muffin cups, filling each about 3/4 full.
6. Bake for 20–25 minutes until set and golden on top.
7. Let them cool in the pan for 5 minutes before removing.
8. Serve warm or store once cooled.
Notes
Use full-fat cottage cheese for the best creamy texture.
Avoid overfilling the muffin cups to prevent overflow while baking.
