These Cosmic Brownies bring back all the nostalgic joy of the iconic lunchbox treat—only better. Thick, fudgy, and topped with a silky chocolate ganache and colorful candy-coated chips, they’re a guaranteed crowd-pleaser for kids and adults alike.
Ingredients
10 tablespoons unsalted butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
2 teaspoons vanilla extract
2 large eggs
3/4 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
1/2 cup heavy cream
1 cup semi-sweet chocolate chips
1/3 cup candy-coated chocolate chips or rainbow sprinkles
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
2. Melt butter in a large bowl, then whisk in granulated sugar and brown sugar.
3. Add vanilla extract and eggs. Whisk until mixture becomes glossy.
4. Sift in cocoa powder, flour, and salt. Stir gently using a spatula just until combined.
5. Pour batter into the prepared pan and smooth the top evenly.
6. Bake for 20–22 minutes, or until a toothpick comes out with a few moist crumbs.
7. While brownies cool, heat heavy cream in a saucepan until simmering.
8. Pour hot cream over chocolate chips in a heatproof bowl. Let sit 2 minutes, then stir to combine into ganache.
9. Spread ganache evenly over cooled brownies.
10. Sprinkle candy-coated chips or rainbow sprinkles on top.
11. Chill until set, then slice into squares and serve.
Notes
Do not overbake—the center should be just set with a few moist crumbs for the fudgiest texture.
Chill fully before slicing to keep the ganache from smearing.
Use parchment paper to lift the whole slab out cleanly and avoid sticking.
