Ingredients

1 can (20 oz) crushed pineapple, drained

1 package (3.4 oz) instant vanilla pudding mix

1 tub (8 oz) Cool Whip, thawed

1 cup mini marshmallows

1 cup shredded sweetened coconut

½ cup chopped pecans (optional)


Instructions

1. Drain the crushed pineapple using a fine mesh sieve. Gently press out excess juice.

2. In a large mixing bowl, combine the pineapple with the dry pudding mix until well blended and thickened.

3. Fold in the Cool Whip gently using a rubber spatula to keep the fluff light.

4. Add mini marshmallows, shredded coconut, and pecans (if using). Fold everything together evenly.

5. Cover and refrigerate for at least 1 hour before serving.

Notes

Be sure to drain the pineapple well to avoid watery fluff.

If using homemade whipped cream, make sure it’s whipped to stiff peaks.
