Comforting Shepherd’s Pie Soup

Description

Everything you love about Shepherd’s Pie made into a comforting, creamy soup. Hearty ground beef, peas, carrots, and a swirl of mashed potatoes come together in a rich broth for the ultimate one-pot cozy meal.


Ingredients

Ground beef

Carrots, diced

Green peas

Onion, diced

Garlic, minced

Beef broth (low-sodium preferred)

Mashed potatoes (prepared)

Tomato paste

Worcestershire sauce

Thyme

Bay leaf

Butter

Milk

Salt and pepper, to taste

Chopped parsley (optional garnish)


Instructions

  1. In a large pot, brown ground beef over medium heat. Drain excess grease.
  2. Add onion and garlic. Cook until onions are translucent.
  3. Stir in carrots, tomato paste, thyme, and bay leaf. Cook for 2-3 minutes.
  4. Pour in beef broth and Worcestershire sauce. Bring to a boil, then reduce to simmer for 10-12 minutes.
  5. Add peas and simmer for 5 more minutes.
  6. Stir in mashed potatoes until melted into the broth.
  7. Season with salt and pepper to taste. Add more broth if soup is too thick.
  8. Serve hot, garnished with parsley if desired.
