Ingredients
Ground beef
Carrots, diced
Green peas
Onion, diced
Garlic, minced
Beef broth (low-sodium preferred)
Mashed potatoes (prepared)
Tomato paste
Worcestershire sauce
Thyme
Bay leaf
Butter
Milk
Salt and pepper, to taste
Chopped parsley (optional garnish)
Instructions
- In a large pot, brown ground beef over medium heat. Drain excess grease.
- Add onion and garlic. Cook until onions are translucent.
- Stir in carrots, tomato paste, thyme, and bay leaf. Cook for 2-3 minutes.
- Pour in beef broth and Worcestershire sauce. Bring to a boil, then reduce to simmer for 10-12 minutes.
- Add peas and simmer for 5 more minutes.
- Stir in mashed potatoes until melted into the broth.
- Season with salt and pepper to taste. Add more broth if soup is too thick.
- Serve hot, garnished with parsley if desired.
