Ingredients

1 cup green or brown lentils

1 medium cucumber diced

2 medium tomatoes diced

1/4 cup red onion finely chopped

1/2 cup fresh parsley finely chopped

2 tablespoons fresh mint chopped

3 tablespoons lemon juice

3 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Rinse the lentils under cold water until clean, then place them in a saucepan with water and bring to a boil. Reduce heat and simmer until tender but not mushy, about 20 minutes. Drain and let cool completely.

2. Dice the cucumber and tomatoes into small pieces and place them in a large mixing bowl.

3. Add the finely chopped red onion, parsley, and mint to the bowl with the vegetables.

4. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create the dressing.

5. Add the cooled lentils to the vegetable mixture, pour the dressing over, and toss gently until everything is evenly combined.

6. Let the salad rest for 10–15 minutes before serving to allow the flavors to blend.

Notes

Make sure the lentils are fully cooled before mixing to keep the vegetables crisp.

For extra flavor, let the salad chill in the fridge for an hour before serving.

Adjust lemon juice and salt to taste depending on how bright or tangy you prefer it.
