Ingredients
2 boneless skinless chicken breasts
1 ½ cups orzo pasta
½ cup sun-dried tomatoes
2 cups fresh spinach
3 cloves garlic, minced
¾ cup grated parmesan cheese
1 cup heavy cream
3 cups chicken broth
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
Instructions
1. Place chicken breasts in the crockpot and season with salt, pepper, and Italian seasoning.
2. Add minced garlic, sun-dried tomatoes, and chicken broth over the chicken.
3. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is fork-tender.
4. Shred the chicken directly in the crockpot using forks.
5. Add heavy cream, parmesan cheese, and orzo. Stir well and cook on high for 20–30 minutes until orzo is tender.
6. Add spinach, cover for 5 minutes until wilted, then stir and serve hot.
Notes
Use freshly grated parmesan for best flavor and melt quality.
Stir orzo occasionally if possible during final cooking to prevent sticking.
Add a splash of cream or broth when reheating to maintain the creamy texture.
