Description

Classic Corn Casserole is a creamy, buttery, and slightly sweet side dish that’s perfect for holidays, BBQs, and weeknight dinners alike. It combines simple pantry staples like corn, sour cream, and muffin mix into a spoonable comfort food that’s always a crowd favorite.


Ingredients

1 can (15 oz) whole kernel corn, drained

1 can (15 oz) creamed corn

1 cup sour cream

1/2 cup (1 stick) melted butter

1 box (8.5 oz) corn muffin mix (like Jiffy)


Instructions

1. Preheat oven to 350°F (175°C).

2. In a large mixing bowl, combine the whole kernel corn, creamed corn, sour cream, melted butter, and corn muffin mix.

3. Stir everything together until just combined.

4. Lightly grease an 8×8 or 9×9 baking dish.

5. Pour the mixture into the dish and smooth the top.

6. Bake uncovered for 45–50 minutes, until the top is golden and the center is just set.

7. Let it rest for 5–10 minutes before serving.

Notes

Don’t overmix the batter; stir just until combined to keep the texture light.
