Description

This Classic Cinnamon Apple Cake is a cozy, spiced bake packed with tender apple chunks and warm cinnamon in every bite. With a soft, moist crumb and a golden top, it’s perfect for fall afternoons, weekend brunches, or as a rustic dessert for your next gathering.


Ingredients

1 ½ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

1 cup granulated sugar

2 large eggs

½ cup vegetable oil

1 teaspoon vanilla extract

2 cups apples, peeled and diced (Granny Smith + Honeycrisp recommended)


Instructions

1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.

2. In a large bowl, whisk together flour, baking powder, salt, and cinnamon.

3. In another bowl, beat the eggs, then whisk in sugar, oil, and vanilla until smooth.

4. Gradually mix the dry ingredients into the wet mixture until just combined.

5. Gently fold in the diced apples using a spatula.

6. Pour the batter into the prepared baking dish and smooth the top.

7. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.

8. Let the cake cool in the pan for 10 minutes before slicing.

9. Serve warm or at room temperature. Store in an airtight container.

Notes

Don’t overmix the batter after adding flour—this keeps the cake tender.

You can add chopped walnuts or pecans for added crunch.

For extra warmth, sprinkle cinnamon sugar over the top before baking.
