Description

Classic Beef Stew is the ultimate comfort food. This hearty one-pot dish features tender beef simmered in a rich, savory broth with carrots, potatoes, and herbs. Ideal for family dinners or make-ahead meals, it’s flavorful, filling, and perfect for cold-weather cooking.


Ingredients

2 lbs chuck roast, cubed

1 cup chopped carrots

1 lb baby potatoes

2 celery stalks, chopped

1 large onion, chopped

3 garlic cloves, minced

2 tbsp tomato paste

4 cups beef broth

1/2 cup red wine (optional)

1/4 cup all-purpose flour

2 tbsp olive oil

2 bay leaves

4 sprigs fresh thyme

1 1/2 tsp salt

1 tsp black pepper


Instructions

1. Lightly coat the cubed chuck roast in flour.

2. In a Dutch oven, heat olive oil over medium-high heat and sear the beef until browned on all sides. Remove and set aside.

3. In the same pot, add onions, carrots, and celery. Cook until the onions are translucent.

4. Stir in garlic and tomato paste. Cook for 1-2 minutes.

5. Deglaze with red wine (or broth), scraping the pot bottom to release flavor bits.

6. Return beef to the pot. Add potatoes, bay leaves, thyme, and beef broth. Season with salt and pepper.

7. Bring to a simmer. Cover and cook on low for 2 hours until beef is tender.

8. Remove herbs. Adjust seasoning to taste before serving.

Notes

For deeper flavor, marinate the beef in red wine for 1 hour before cooking.

Always sear the beef well for optimal caramelization and taste.

Add veggies in stages if using softer types like green beans to prevent overcooking.
