Description
Warm, cozy, and kissed with cinnamon spice, these Cinnamon Maple Roasted Sweet Potatoes are the perfect blend of sweet and savory. Maple syrup caramelizes the cubes into golden perfection while olive oil and herbs balance out the flavors. Ideal for fall feasts, holiday dinners, or just a weeknight side that feels a little extra special.
Ingredients
2 large sweet potatoes
2 tablespoons maple syrup
1 1/2 tablespoons olive oil
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme or rosemary (optional)
Instructions
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
2. Peel and cube the sweet potatoes into 1-inch pieces for even roasting.
3. In a large mixing bowl, toss the sweet potato cubes with olive oil, maple syrup, cinnamon, salt, pepper, and optional herbs.
4. Spread the seasoned cubes in a single layer on the baking sheet to ensure they roast and don’t steam.
5. Roast for 25-30 minutes, flipping halfway through, until golden brown and fork-tender.
6. Serve warm with a drizzle of maple syrup or fresh herb garnish if desired.
Notes
Cut sweet potatoes evenly to ensure uniform roasting—uneven sizes may lead to overcooked or undercooked pieces.
Flip the cubes halfway through for better caramelization on both sides.
If you’re meal prepping, store roasted sweet potatoes in the fridge and crisp them in an air fryer or oven before serving.
