Description

Ingredients

3 medium Honeycrisp apples

1 1/4 cups all-purpose flour

1/2 cup unsalted butter, cold and cubed

2 tablespoons granulated sugar (for dough)

1/4 cup granulated sugar (for filling)

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1/2 teaspoon vanilla extract

1 large egg, beaten (for egg wash)

1 tablespoon coarse sugar (optional)


Instructions

1. In a mixing bowl, combine flour and 2 tablespoons of sugar. Cut in the cold butter until mixture resembles coarse crumbs.

2. Add ice water a tablespoon at a time, mixing gently until dough just comes together. Flatten into a disk, wrap in plastic, and refrigerate for 30 minutes.

3. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

4. Peel and thinly slice the Honeycrisp apples. Toss them in a bowl with lemon juice, 1/4 cup sugar, cinnamon, and vanilla extract.

5. On a floured surface, roll the dough into a 12-inch circle. Transfer to the prepared baking sheet.

6. Arrange the apple slices in overlapping circles, leaving a 2-inch border. Fold the edges of the dough over the apples.

7. Brush crust with beaten egg and sprinkle with coarse sugar if using.

8. Bake for 35–40 minutes until the crust is golden and apples are tender.

9. Let cool slightly before slicing. Serve warm with whipped cream or ice cream if desired.

Notes

For extra flaky crust, make sure your butter is very cold when you cut it into the flour.

Arrange the apples in overlapping layers for the most eye-catching presentation.

Use parchment paper to catch caramelized juices and avoid sticking.
