Ingredients
1 cup mixed greens (arugula, baby spinach, or spring mix)
1 cup mandarin orange segments
1/2 cup pomegranate seeds
1/2 cup cooked beets, sliced or quartered
1/4 cup red onion, thinly sliced
1/3 cup feta cheese, crumbled
1/3 cup candied pecans
2 tablespoons balsamic glaze or vinaigrette (optional)
Instructions
1. Wash and dry all greens thoroughly.
2. Peel and segment mandarins, removing any membrane.
3. Thinly slice red onion and set aside.
4. If beets are not pre-cooked, roast or boil them until tender, then slice or quarter.
5. In a large serving bowl, layer the mixed greens evenly.
6. Top with sliced beets, mandarin segments, and pomegranate seeds.
7. Add the red onion slices evenly over the top.
8. Sprinkle crumbled feta and candied pecans over the salad.
9. Drizzle with balsamic glaze or vinaigrette right before serving (optional).
10. Serve immediately using tongs to distribute toppings evenly.
