Ingredients
8 oz dark chocolate (60% cocoa or higher), finely chopped
1/2 cup heavy cream
1 tbsp unsalted butter
1/2 tsp vanilla extract
Pinch of salt
Cocoa powder, chopped nuts, or sprinkles for coating (optional)
Instructions
1. Chop the dark chocolate and place in a heatproof bowl.
2. Heat the heavy cream in a saucepan until just simmering.
3. Pour the hot cream over the chocolate and let sit for 1 minute.
4. Stir gently until the chocolate is fully melted and smooth.
5. Add the butter, vanilla extract, and salt. Stir until incorporated.
6. Cover the bowl and chill the ganache for 1–2 hours until firm.
7. Use a scoop or spoon to portion and roll the ganache into balls.
8. Roll each truffle in your choice of coating.
9. Place truffles on a parchment-lined tray and chill again for 30 minutes before serving.
Notes
Use high-quality chocolate for the best texture and depth of flavor.
If the ganache is too soft to roll, chill for an additional 15–30 minutes.
For neater results, use disposable gloves when rolling the truffles.
