Description

These Chocolate Mint Brownies layer a rich cocoa base, a creamy mint filling, and a silky chocolate ganache for a dessert that’s indulgent and refreshing. Perfect for parties, holidays, or freezing ahead!


Ingredients

1/2 cup unsalted butter

1 cup granulated sugar

1/3 cup unsweetened cocoa powder

1 teaspoon vanilla extract

2 large eggs

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 cup unsalted butter (softened)

1 1/2 cups powdered sugar

2 tablespoons heavy cream

3/4 teaspoon peppermint extract

2 to 3 drops green food coloring (optional)

3/4 cup semi-sweet chocolate chips

3 tablespoons unsalted butter


Instructions

1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.

2. In a saucepan, melt butter. Stir in sugar, cocoa powder, and salt until smooth.

3. Mix in eggs and vanilla until glossy. Add flour and stir until just combined.

4. Pour into the pan and bake for 20 to 22 minutes. Cool completely.

5. Beat softened butter for the mint layer. Gradually add powdered sugar.

6. Mix in cream, peppermint extract, and green food coloring. Beat until fluffy.

7. Spread mint layer evenly over cooled brownies. Chill for 30 minutes.

8. In a heatproof bowl, melt chocolate chips and butter over simmering water.

9. Let ganache cool slightly, then pour over mint layer. Spread evenly.

10. Chill until firm. Slice using a hot, clean knife. Serve cold for best texture.

Notes

For cleaner cuts, always refrigerate before slicing and wipe your knife between each cut.

You can skip the food coloring if you prefer a natural look—the flavor remains perfect.

Use high-quality cocoa and chocolate chips for the most decadent result.
