These bakery-style Chocolate Chip Coffee Muffins are a cozy treat perfect for breakfast or a sweet snack. Infused with brewed coffee and loaded with melty chocolate chips, they strike the perfect balance of moist texture and rich flavor.
Ingredients
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 cup brewed coffee (cooled)
1/2 cup Greek yogurt or sour cream
2 large eggs
1 teaspoon vanilla extract
1/3 cup vegetable oil or melted butter
3/4 cup semi-sweet chocolate chips
Instructions
1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease.
2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
3. In another bowl, whisk eggs, brown sugar, and granulated sugar until smooth. Add coffee, yogurt, vanilla, and oil. Mix well.
4. Pour wet ingredients into dry ingredients. Fold gently until just combined.
5. Stir in most of the chocolate chips, saving some for topping.
6. Scoop batter evenly into muffin cups, about 3/4 full. Sprinkle with remaining chocolate chips.
7. Bake for 16–20 minutes or until a toothpick inserted comes out clean.
8. Cool in pan for 5 minutes, then transfer to wire rack.
Notes
Don’t overmix the batter—stop as soon as the dry ingredients are moistened to avoid dense muffins.
Use paper liners to make cleanup easier and help muffins hold their shape.
Add a sprinkle of coarse sugar on top before baking for a crunchy muffin top.
