Chocolate Chip Caramel Bars

Description

Rich, buttery, and decadently chewy, these Chocolate Chip Caramel Bars combine a cookie crust with luscious caramel and melty chocolate chips. Perfect for any gathering or a cozy treat at home.


Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

2 cups all-purpose flour

1 teaspoon vanilla extract

1/4 teaspoon salt

11 oz caramel candies (about 40 pieces)

1/4 cup heavy cream

1 1/2 cups semi-sweet chocolate chips, divided


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, cream together butter and brown sugar until fluffy.
  3. Stir in vanilla and salt, then add flour. Mix to form a soft dough.
  4. Press dough evenly into the bottom of the prepared pan.
  5. Bake for 15 minutes or until lightly golden. Let cool slightly.
  6. While crust cools, melt caramel candies with heavy cream in a saucepan over low heat, stirring until smooth.
  7. Sprinkle half of the chocolate chips over the crust.
  8. Pour melted caramel over the chips, then top with remaining chocolate chips.
  9. Bake again for 15 minutes until caramel bubbles.
  10. Cool completely, lift from pan, and cut into squares.
