Description

These Chocolate Caramel Cheesecake Bites are rich, bite-sized indulgences with a chocolate cookie crust, creamy cheesecake filling, gooey caramel layer, and a smooth chocolate coating. Ideal for parties, gifting, or satisfying your sweet tooth, they’re a stunning mix of texture and flavor in every bite.


Ingredients

1 cup chocolate cookie crumbs

4 tablespoons melted butter

8 oz cream cheese

1/3 cup granulated sugar

1 teaspoon vanilla extract

1 large egg

1/2 cup caramel sauce

1 cup semi-sweet chocolate chips

1/4 cup shredded coconut (optional)


Instructions

1. Combine chocolate cookie crumbs and melted butter until it resembles wet sand. Press into a mini muffin pan lined with paper liners. Chill in the freezer for 10 minutes.

2. Beat cream cheese until smooth. Add sugar and vanilla extract; mix well. Add the egg and mix just until combined. Spoon filling over the crusts.

3. Bake at 325°F (160°C) for 14–16 minutes or until the centers are set. Let cool completely, then refrigerate for at least 1 hour.

4. Spoon or pipe caramel sauce over each chilled cheesecake bite. Chill again for 15 minutes.

5. Melt chocolate chips in a double boiler or microwave. Drizzle or dip each bite with melted chocolate. Sprinkle with shredded coconut if using.

Notes

For the best texture, avoid overbaking. The centers should be slightly jiggly.

Let them chill thoroughly before adding the caramel and chocolate layers for clean, neat bites.

You can freeze them after final assembly; just thaw overnight in the fridge for perfect texture.
