A smoky, vibrant Chipotle Chicken Bowl layered with juicy grilled chicken, creamy avocado, sweet corn, hearty black beans, and a tangy chipotle-lime sauce. Perfect for a quick dinner or meal prep.
Ingredients
2 boneless skinless chicken breasts
1 tablespoon chipotle chili powder
2 tablespoons olive oil
1 cup black beans, cooked and drained
1 cup sweet corn kernels
1 avocado, sliced
2 tablespoons fresh cilantro, chopped
1/2 cup Greek yogurt or sour cream
1 clove garlic, minced
2 tablespoons lime juice
Salt to taste
Instructions
1. Whisk olive oil, chipotle chili powder, salt, and lime juice. Coat chicken and marinate for 20 minutes.
2. Heat a skillet or grill pan over medium-high heat. Cook chicken 5–6 minutes per side until 165°F. Rest, then slice.
3. In a bowl, combine Greek yogurt (or sour cream), garlic, lime juice, and chipotle chili powder for the sauce. Whisk until smooth.
4. Arrange black beans, corn, avocado, and chicken in a bowl. Drizzle with sauce.
5. Garnish with fresh cilantro and serve immediately.
Notes
For extra smokiness, add a pinch of smoked paprika to the marinade.
To keep avocados from browning in meal prep, toss them in lime juice just before storing.
Double the sauce recipe if you like a generous drizzle — it keeps for 2 days in the fridge.
