Description
This Chicken with Garlic Parmesan Rice is a one-skillet comfort meal featuring juicy seared chicken and creamy garlic rice infused with Parmesan. It’s hearty, full of flavor, and makes an excellent weeknight dinner with minimal cleanup.
Ingredients
2 boneless skinless chicken breasts
1 tablespoon olive oil
2 tablespoons butter (divided)
4 cloves garlic, minced
1 cup uncooked long grain white rice
2 ¼ cups chicken broth
½ teaspoon salt
¼ teaspoon black pepper
½ cup grated Parmesan cheese
1 tablespoon chopped parsley (optional)
Instructions
1. Season chicken breasts with salt and pepper.
2. In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat.
3. Sear chicken breasts for 4–5 minutes per side until golden. Remove and set aside.
4. Reduce heat to medium. Add remaining butter to skillet. Sauté minced garlic for 30 seconds, just until fragrant.
5. Add uncooked rice and stir to coat with garlic butter.
6. Pour in chicken broth and stir in ½ teaspoon salt.
7. Nestle chicken back into the skillet. Cover and cook on low heat for 18–20 minutes.
8. Once rice is tender and liquid is absorbed, remove skillet from heat.
9. Sprinkle in Parmesan cheese and stir gently.
10. Cover again and let sit for 2–3 minutes.
11. Garnish with chopped parsley and serve warm.
Notes
Let the rice sit covered after adding Parmesan to achieve a creamy texture without overcooking.
For extra flavor, marinate the chicken in garlic and olive oil for 30 minutes before cooking.
If using pre-shredded Parmesan, reduce salt slightly to avoid over-seasoning.
