This cozy, creamy casserole layers juicy chicken, a medley of veggies, rich cream sauce, and herby stuffing in one dish. A weeknight lifesaver or Sunday dinner staple, it brings classic comfort with minimal effort.
Ingredients
2 cups cooked chicken, shredded or cubed
6 ounces stuffing mix
1 1/2 cups chicken broth, hot
1 can (10.5 ounces) cream of chicken soup
1/2 cup sour cream
1 1/2 cups mixed vegetables (frozen or pre-cooked)
1/4 cup butter, melted
1/4 cup onion, finely diced (optional)
1/4 cup celery, finely diced (optional)
Instructions
1. In a large mixing bowl, combine stuffing mix with hot chicken broth and melted butter. Let sit for 5 minutes until absorbed.
2. In another bowl, stir together cooked chicken, cream of chicken soup, sour cream, and mixed vegetables. Add sautéed onion and celery if using.
3. Grease a 9×13-inch casserole dish. Spread the chicken mixture evenly in the dish.
4. Top with the softened stuffing layer, spreading gently to cover.
5. Bake uncovered at 375°F (190°C) for 30–35 minutes, until golden and bubbly.
6. Let rest for 5–10 minutes before serving.
Notes
For extra crispiness on top, drizzle a little melted butter over the stuffing before baking.
You can swap in turkey and leftover holiday veggies for a great post-holiday meal.
