Ingredients
2 boneless skinless chicken breasts
1 cup all-purpose flour
2 large eggs, beaten
2 cups breadcrumbs (panko or traditional)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder (optional)
1/2 teaspoon paprika (optional)
1/2 cup neutral oil (canola, vegetable, or sunflower)
Lemon wedges, for serving
Instructions
1. Place chicken breasts between parchment paper and pound to 1/4-inch thickness.
2. Set up breading station: flour in one bowl, eggs in another, breadcrumbs mixed with seasonings in the third.
3. Dredge chicken in flour, dip in eggs, then coat with breadcrumbs. Press lightly to adhere.
4. Heat oil in a skillet over medium-high heat. Fry chicken 3–4 minutes per side until golden.
5. Drain schnitzel on a rack or paper towels.
6. Serve hot with lemon wedges and desired sides.
Notes
Let the breaded chicken rest for 10 minutes before frying to prevent the coating from falling off.
Use a wire rack to rest fried schnitzels to keep them crisp.
Panko breadcrumbs offer extra crunch compared to regular breadcrumbs.
