Ingredients

1 lb (450 g) boneless, skinless chicken breast or thighs, cubed

2 tablespoons olive oil

1 tablespoon unsalted butter

1 medium onion, finely chopped

3 garlic cloves, minced

8 oz (225 g) cremini or white mushrooms, sliced

1 teaspoon paprika

Salt and pepper, to taste

1 tablespoon all-purpose flour

1 cup (240 ml) chicken broth

1 tablespoon Dijon mustard

1/2 cup (120 ml) sour cream

2 tablespoons chopped fresh parsley (optional, for garnish)


Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until browned. Remove and set aside.
  2. In the same skillet, add remaining olive oil and butter. Sauté chopped onions until translucent.
  3. Add garlic and mushrooms, season with salt and paprika, and cook until mushrooms are browned and their moisture evaporates.
  4. Sprinkle in flour and cook for 1 minute. Gradually stir in chicken broth and add Dijon mustard. Simmer until sauce thickens slightly.
  5. Reduce heat and stir in sour cream. Return chicken to the skillet and simmer until heated through.
  6. Adjust seasoning to taste. Garnish with chopped parsley and serve hot.
