This Chicken Fried Rice is your go-to weeknight dinner—quick, satisfying, and full of flavor. Perfectly stir-fried jasmine rice gets tossed with tender chicken, scrambled eggs, colorful veggies, and a rich soy-sesame seasoning. It’s a complete meal in one pan that uses simple ingredients and delivers big on taste.
Ingredients
2 cups cooked jasmine rice (preferably day-old)
1 cup diced chicken breast or thighs
2 large eggs, beaten
1/2 cup diced carrots
1/2 cup green peas
2 cloves garlic, minced
1/2 small onion, finely chopped
3 tablespoons soy sauce
1 teaspoon sesame oil
2 tablespoons vegetable oil
2 stalks green onion, chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Prepare all ingredients in advance. Cook and cool rice, dice chicken and vegetables, and beat the eggs.
2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add chicken, season with salt and pepper, and cook until golden brown. Remove and set aside.
3. Add a little oil, pour in the beaten eggs, and scramble just until set. Remove and set aside.
4. Sauté onion, garlic, carrots, and peas until softened and fragrant.
5. Add the rice and break up any clumps. Let it fry slightly for texture.
6. Return chicken and eggs to the pan. Pour in soy sauce and sesame oil. Stir-fry to combine and heat through.
7. Garnish with chopped green onions and serve hot.
Notes
Day-old rice is key for texture—fresh rice will turn mushy when stir-fried.
Feel free to use rotisserie chicken for a shortcut and added flavor.
A splash of water while reheating in a skillet will help revive leftovers without drying out.
