A vibrant and crunchy salad combining shredded chicken, crisp cabbage, sweet cranberries, and toasted almonds, all tossed in a zingy ginger sesame dressing. Perfect for quick lunches, potlucks, or refreshing side dishes.
Ingredients
2 cups shredded green cabbage
1 cup shredded purple cabbage
1 cup julienned carrots
2 cups cooked shredded chicken
2 green onions, sliced
1/3 cup dried cranberries
1/3 cup toasted sliced almonds
1 tablespoon black sesame seeds
Orange slices for garnish (optional)
2 tablespoons sesame oil
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon grated fresh ginger
1 tablespoon honey
1 garlic clove, minced
1 tablespoon lime juice
Instructions
1. Shred green and purple cabbage thinly. Julienne carrots and slice green onions. Add to a large bowl with shredded chicken.
2. In a small bowl or jar, whisk or shake together sesame oil, rice vinegar, soy sauce, ginger, honey, garlic, and lime juice until fully combined.
3. Toast sliced almonds in a dry skillet over medium heat until golden.
4. Pour dressing over salad ingredients. Add cranberries, almonds, and black sesame seeds. Toss everything until evenly coated.
5. Serve immediately or chill for 30 minutes. Garnish with orange slices or extra sesame seeds if desired.
Notes
Use rotisserie chicken for extra convenience and flavor.
Prep ingredients and store separately for a make-ahead meal.
For extra crunch, add crispy wonton strips or sunflower seeds.
