Ingredients
1 lb boneless chicken breast or thighs
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 cup fresh strawberries, diced
1 jalapeño, minced
1/4 cup red onion, finely chopped
1/4 cup fresh mint leaves, chopped
1 tbsp lime juice
1 tsp honey (optional)
Instructions
1. In a bowl, mix chicken chunks with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Let marinate for 15–30 minutes.
2. Meanwhile, prepare the salsa by combining diced strawberries, jalapeño, red onion, mint, lime juice, and honey (if using). Chill until ready.
3. Heat a cast iron skillet or grill pan over medium-high heat. Sear chicken bites for 3–4 minutes per side until golden and cooked through.
4. Build your bowl with a base of greens, rice, or quinoa. Add chicken, then spoon the strawberry-jalapeño mint salsa on top.
5. Garnish with extra mint or a lime wedge. Serve immediately.
Notes
For extra flavor, zest a bit of lime into the salsa for brightness.
If using chicken thighs, adjust cooking time slightly for thicker cuts.
