Description

This Chicken and Mushroom Bake is the ultimate cozy comfort dish—tender chicken breasts topped with golden mushrooms and smothered in a creamy garlic sauce, all baked until bubbly and cheesy. It’s easy to make, perfect for family dinners, and reheats beautifully.


Ingredients

4 boneless skinless chicken breasts

2 cups sliced mushrooms (cremini or white button)

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup shredded mozzarella cheese

1/2 cup freshly grated parmesan cheese

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 baking dish.

2. In a skillet over medium heat, sauté the mushrooms in olive oil until golden and tender. Set aside.

3. Place the chicken breasts in the prepared baking dish. Season both sides with salt and pepper.

4. Scatter the sautéed mushrooms evenly over the chicken.

5. In a mixing bowl, combine heavy cream, chicken broth, minced garlic, and half the parmesan cheese. Whisk until smooth.

6. Pour the sauce mixture evenly over the chicken and mushrooms.

7. Sprinkle mozzarella cheese and the remaining parmesan on top.

8. Cover the dish with foil and bake for 20 minutes.

9. Remove foil and continue baking for 15–20 minutes, until the cheese is golden and the chicken is fully cooked (165°F internal temperature).

10. Let rest for 5 minutes, garnish with chopped parsley, and serve hot.

Notes

Letting the bake rest before serving helps the sauce thicken and flavors meld.

For a deeper flavor, sauté the garlic along with the mushrooms.

If using chicken thighs, extend the cook time slightly or check doneness with a thermometer.
