Ingredients
1 ½ cups old-fashioned rolled oats
1 cup diced apples (peeled if preferred)
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg (optional)
½ teaspoon baking powder
¼ teaspoon salt
2 large eggs
⅓ cup maple syrup or honey
½ cup peanut butter or almond butter
1 teaspoon vanilla extract
Instructions
1. Preheat the oven to 350°F (175°C) and line an 8×8 or 9×9-inch baking pan with parchment paper.
2. In a large bowl, mix together oats, cinnamon, nutmeg (if using), baking powder, and salt.
3. In a separate bowl, whisk the eggs, maple syrup (or honey), nut butter, and vanilla extract until smooth.
4. Add the wet ingredients to the dry ingredients and stir just until combined.
5. Fold in the diced apples gently.
6. Pour the mixture into the prepared baking pan and spread it evenly with a spatula.
7. Bake for 25–30 minutes, or until the edges are golden and the center is set.
8. Let cool in the pan for 10 minutes, then lift out and allow to cool completely before slicing.
Notes
For extra flavor and texture, stir in ¼ cup chopped walnuts or pecans with the apples.
Use a natural, drippy nut butter for easier mixing and a creamier texture.
