Ingredients
12 oz rotini pasta
2 chicken breasts
1 tablespoon olive oil
1 tablespoon butter
2 garlic cloves, minced
1 cup Velveeta cheese, cubed
1 cup whole milk
1 cup shredded mozzarella cheese
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh parsley, chopped
Instructions
1. Season chicken with salt and pepper. In a hot skillet, sear chicken in olive oil until golden and cooked through. Set aside.
2. Boil rotini pasta in salted water until al dente. Drain and set aside.
3. In a saucepan, melt butter. Add garlic and sauté until fragrant (1–2 minutes).
4. Lower heat and add Velveeta and milk. Whisk until smooth. Add mozzarella and continue stirring until melted.
5. Add pasta to the sauce. Stir to coat evenly. Season to taste.
6. Plate the pasta, top with seared chicken, and garnish with parsley and extra cheese if desired.
Notes
Cook pasta *just* to al dente so it doesn’t over-soften in the sauce.
For more garlic kick, add 1/4 tsp garlic powder to the sauce.
Add a splash of pasta water to thin the sauce if needed.
